THE SEASON The New Catch Holland Herring is a piece of gastronomic heaven, a fabulous buttery and mild matjes (young) herring unlike any other, due to its exceptionally high and healthy omega-3 fat content. Traditionally, the New Catch Holland Herring is eaten by holding the whole herring by the tail and dropping it into your mouth. Visitors to Russ & Daughters are likely to see aficionados partaking of this food ritual right at the counter, starting on June 6.

The New Catch Holland Herring will be available at Russ & Daughters for the duration of their prized, yet limited, season. Russ & Daughters is a direct importer, and receives herring from the first delivery of this New Catch to New York, and then continuously throughout the year.
THE CELEBRATION The New Catch Herring season is also a time of celebration. On June 26th, we’ll celebrate the wonders of herring at the annual Russ & Daughters Herring Pairing. Join us for an evening filled with a dizzying and delectable array of Russ & Daughters herring preparations, including the New Catch. Each herring dish is paired with an interesting spirit or cocktail, specifically chosen by our friends, the experts at Astor Center.
We are delighted to announce that the guest chef for the 2012 Russ & Daughters Herring Pairing is Chef Chikara Sono from Kyo Ya Restaurant. Chef Sono and Kyo Ya were recently awarded three stars from The New York Times.
Chef Sono specializes in kaiseki, Japanese haute cuisine, which involves artfully crafted dishes built around seasonal ingredients. Pete Wells, in his NYT restaurant review, wrote that Chef Sono’s cooking was, “…so richly pleasurable that the only intelligent response was total submission.” (The New York Times, April 10, 2012). Wells also wrote that, “Like much Japanese cuisine, it is grounded in the shapes and rhythms of the natural world, and in respect for the seasons.”
The New Catch herring is a fitting ingredient for Chef Sono, not only for its prized peak season, but herring also happens to be the chef’s “favorite fish.” Chef Sono hails from Hokkaido, the northern Japanese island famous for its herring fishing. With its buttery texture and delicate flavor, the New Catch herring is often compared to the finest sashimi. This year, Herring Pairing guests will have the unique opportunity to taste’s this “master practitioner’s” artful interpretation of Japan’s own herring heritage, alongside Russ & Daughters traditional favorites.
We are also excited to announce that Chef Sono’s dish will be paired with Dassai Junmai Daiginjo premium sake. Junmai Daiginjo is the highest class of artisinal sake in Japan. Like the Russ family of Russ & Daughters, Dassai is also a fourth generation family producer.
Accompanying the festivities, the Danny Fox Trio will perform throughout the night. And, of course, the ever popular herring photo booth will return.
